The flour guide you need: all-purpose, gluten-free, and everything in between

Pancake & waffle

Mix together 1 cup of buttermilk, 2 tablespoons of vegetable oil, 1 large egg (beaten), 2 teaspoons of baking powder, a pinch of salt and 1⁄2 cup of all-purpose flour. Cook on a preheated griddle or waffle iron. Don’t forget to pour some real maple syrup over it! They will be extra fluffy after sitting for a few minutes. Serve warm with plenty of butter. If they stick to your pan, reduce heat slightly or grease more thoroughly next time!


There’s a whole range of flours out there, including all-purpose white (the most common), whole wheat and multigrain blends. All are different; some rise better than others. If a recipe doesn’t specify what kind of flour to use—and it probably won’t unless it’s for something specific like pizza or bagels—then go with all-purpose.
