The flour guide you need: all-purpose, gluten-free, and everything in between

Biscuit & scone

2 cups self-rising flour 3/4 cup shortening or lard 2 teaspoons sugar 2 tablespoons cream or water 1/2 teaspoon salt 2/3 cup milk. Mix well. Add more milk as needed to make a dough consistency. Roll out on floured board. Cut into shapes with a biscuit cutter (or pastry wheel). Bake at 450 F for 10 minutes or until browned on top. Serve hot with butter and honey, jam, or apple butter.

Bread & rolls

The best bread comes from scratch—and preferably with yeast. Homemade bread can’t be beat for taste or nutrition. It takes time to rise and requires patience to bake, but it’s worth it. If you prefer a quicker loaf of bread, try one made with baking powder instead of yeast. Baking powder is easy to find—just look on grocery store shelves near other boxed cake mixes and pancake mixes.
